This Peach Feta Salad Is What Summer Tastes Like

Life on a farm is never boring. Between training horses, feeding the barnyard of animals, harvesting crops, and creating seasonal recipes, there’s always a story waiting to be told. This one begins with our gentle Gypsy Vanner mare, Adira.

Adira is currently in training with Davis Horses, and we’re at the exciting stage of preparing her tack for her imminent graduation. If you know Gypsy Vanners, you know they’re not easy to fit. Their broad shoulders, short backs, and unique build often mean custom tack is the only way to go. We’ve been in the process of selling two beautiful (but unfortunately wrong sized) saddles and will be rolling those funds into new gear so we can keep training Adira through the Fall riding season. Every ride puts more miles under her feet, builds her confidence, and deepens our partnership.

But here’s where the story takes a sweet (and juicy!) turn.

The wonderful woman who bought one of our saddles came to pick it up with the kindest gift in hand: a bag of farm grown Elberta peaches. Not just any peaches. Perfectly ripe, softball sized, fragrant, and dripping with juice at the first bite. It was like tasting sunshine. The gift was even more meaningful because while our BLeaves Farms peaches had already wrapped up their season, down south in the wine country of Arizona, it was still peach season! So, we were able to savor a farm-to-table treat out of our usual season, and it felt like a little miracle.

And what do you do when life hands you peaches? You make something absolutely unforgettable.

We resurrected Jeff’s Peach Feta Spinach Blueberry Basil Orzo Salad recipe for those who are still enjoying peach season. Sweet peaches, salty feta, bright basil, hearty spinach, tart blueberries, and tender orzo all tossed together with a zesty apple cider vinaigrette. It’s summer in a bowl. The kind of dish that makes you close your eyes and say, “Oh wow.” Here’s the recipe.

The Farm Connection: Why Seasonal Eating Matters

One of the things we love most about farming is the way it teaches you to eat with the seasons. You look forward to peaches in the summer, apples and pears in the Fall, citrus in the winter, and berries in spring. Recipes like this become bookmarks in time, tying memories to flavors.

For us, this salad isn’t just food. It’s a reminder of Adira’s training, the thoughtfulness of fellow horsewomen, and the joy of eating what’s ripe and ready. Whether you’re on a farm or in the city, creating a seasonal dish connects you to something bigger: the rhythm of the land.
