This loaf has become a staple here at BLeaves Farms. The bread we make when we want the farm to feel extra cozy, when guests are visiting, or when we simply need a reminder to slow down and enjoy the moment.
We call it our Roasted Garlic Rosemary Artisan Loaf, and it truly tastes like the heart of the farm.
Slow Living Starts in the Kitchen
There’s something deeply grounding about making bread by hand. Mixing simple ingredients. Waiting for dough to rise. Letting time do its thing.
While the dough rests, we wander the garden, check on animals, or harvest herbs. It turns bread baking into an afternoon ritual instead of a chore, a tiny rebellion against the fast pace of modern life.
One of our favorite parts? Walking outside and clipping fresh rosemary straight from our herb garden to fold into the dough.
The smell alone is therapy.
Our Secret Ingredient 🤫
We use Blue Bird Flour for our artisan loaves, and it has become our not-so-secret secret. The texture, flavor, and structure it gives this bread is incredible. It’s the flour we trust for every loaf we bake.
When combined with roasted garlic and fresh rosemary, it creates the perfect rustic, bakery-style bread with a crisp crust and soft, airy interior.
The REAL Bread-Baking Secret: A Dutch Oven

And the easiest way to create steam at home is with a cast iron Dutch oven. It traps moisture while baking and transforms simple dough into a bakery-style artisan loaf.

Roasted Garlic Rosemary Artisan Bread Recipe
Ingredients
Roasted Garlic
- 1 head garlic
- 1 tsp olive oil
- Pinch of salt
Bread Dough
- 2¼ tsp active dry yeast
- 1 tsp honey or sugar
- 1¼ cups warm water
- 1½ tsp salt
- 2 Tbsp fresh rosemary (from the garden)
- 8–10 roasted garlic cloves, chopped
- 3 cups Bluebird flour
- 1 Tbsp olive oil
Step 1: Roast the Garlic
- Heat oven to 400°F.
- Slice top off garlic head.
- Drizzle with olive oil and salt.
- Roast 30–40 minutes until soft and golden.
- Cool and chop cloves.
The smell alone is worth it.
Step 2: Make the Dough
- Mix yeast, honey (or sugar), and warm water. Let foam at least 5 minutes.
- Add salt, rosemary, garlic, and flour.
- Stir until a shaggy dough forms.
- Drizzle with olive oil, cover, and let rise 1 hour.
Step 3: Shape + Second Rise
- Gently shape into a round loaf (don’t punch down!).
- Let rise 30 minutes while oven heats to 450°F with Dutch oven inside.
Step 4: Bake
- Carefully place dough into hot Dutch oven.
- Bake 30 minutes covered.
- Bake 10–20 minutes uncovered until deep golden brown.
- Cool 20 minutes before slicing.
Slice. Add butter. Better yet, Jersey butter! Listen to the crunch. Enjoy life.
