Step-by-Step Guide to Making Fresh Mozzarella

Step 1: Prepare Your Ingredients

Dissolve the citric acid in 1 cup of filtered water. In a separate cup, dissolve the rennet in ¼ cup of water.

Drain the curds into a cheesecloth-lined strainer. Heat the curds in hot water (or microwave for 30 seconds at a time) until they become stretchy. Knead the curds until smooth and shiny, then shape them into a ball.
