Equipment
- 1 cutting board
- 1 chef's knife
- 1 Large Pot
- 1 stirring spoon
Ingredients
- 0.5 lb lean ground beef or meat substitute
- 2 cups NO-CHICKEN chicken broth
- 2 10 oz cans Ro-Tel diced tomatoes with green chilies (with juices)
- 0.5 14 oz can black beans, drained and rinsed
- 0.5 12 oz can corn, drained
- ¼ red bell pepper chopped
Seasonings:
- ¼ tbsp chili powder
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp ground cumin
- ½ tsp smoked paprika
- 4 oz cream cheese softened, Philly recommended
- Salt & pepper to taste
Optional Toppings:
- Shredded cheddar or Mexican blend cheese
- Diced avocado
- Fresh cilantro
- Tortilla strips or crushed chips
- Scallions
- Lime wedges
Instructions
Brown the Beef or Meat Substitute:
- In a large pot over medium-high heat, brown the ground beef or meat substitute for about 10 minutes, breaking it up as it cooks.
- Drain excess fat if needed.
Add Ingredients (except cream cheese):
- Stir in broth, tomatoes, beans, corn, bell pepper, and seasonings.
- Bring to a boil over high heat.
Simmer:
- Reduce heat and simmer uncovered for 8 minutes while you prep toppings.
Add Cream Cheese:
- Cut the cream cheese into small pieces and stir into the soup until fully melted and incorporated.
- Stir often.
Season & Serve:
- Taste, then season with salt and pepper.
- Ladle into bowls and add toppings as desired.
